Backwards pants, I mean breakfast potatoes

Everybody loves breakfast...well, most people do anyway. Sometimes we just need to eat something quick to get out the door. I have heard that breakfast is the most important meal of the day. I would say that when I do eat breakfast, I have more energy throughout the morning. I am normally not a big breakfast eater. On the weekends though, it is easier to have a bigger breakfast, probably because it's a little later in the morning.


This particular recipe started about 20 years ago and has become a staple on Sunday morning and sometimes Saturday. It all started when we would get ready for church and Neenee was making breakfast and I was dressing our 5 kids. Soon the first would come down the stairs (shirt on backward). Then the next would come down (buttons on the front, supposed to be on the back). Neenee said, " Let's make a deal. You make breakfast and I'll dress the kids." I said, "Deal" and spicy cheesy potatoes was born. Through the years, there have been some variations but overall this recipe has a basic formula and you can create your own recipe from here.

If using large potatoes, use 1 potato for every person eating plus 1.

if you don't like skins...peel, wash and slice into small slices or chunks, otherwise skins it is.

Melt 1/4 cup of butter in pan or more if making a large batch ( more than 8 potatoes).

add potatoes to the pan and cook on high until potatoes begin to soften.

turn down the heat to medium and move potatoes to the side, add 1/2 onion sliced and diced and 2 cloves of garlic, let your onion and garlic saute for a while.

sprinkle garlic, salt, pepper, and chili powder on the potatoes.

when onions are softened, stir into potatoes and turn up the heat to high again.

when the potatoes are getting soft, add the following,

5-8 mushrooms, sliced

1 lb Italian sausage

stir until well blended.

Add 2-4 cups of cheese, as you like it, or No cheese.

Cover for about a minute and then turn the heat off.

Enjoy with some eggs and toast
