One thing I love about our muffin recipe is that it is so versatile! When you understand the base you can mix and match to create the flavor of your choice! This muffin will have a taste close to banana bread but with Chocolate! Once you get to know me better you will see you can never have too much Chocolate or cheese! These muffins were enjoyed by our grandkids and our daughter! Needless to say, they did not stay around long! Without further ado here is the recipe! Like, share and subscribe! Preheat oven to 350*
In the mixer add
2 large eggs
1/3 cup olive oil
lightly filled 1 cup brown sugar
1 cup very ripe bananas-
2 tsp vanilla
Mix until well blended. It is okay if the bananas are a bit chunky! More flavor to be had by all! Then add to the bowl:
1 3/4 cups NeeNee mix
1 tsp baking powder
1/2 tsp baking soda
3/4 tsp sea salt
3/4 tsp Xanthan Gum
2 tsp cinnamon
1 cup crushed walnuts
start your mixer on low and slowly increase speed until well mixed. Use a spatula to scrape the sides and be sure all dry ingredients are mixed in. If needed mix a bit more. When done fold in your chocolate chips with a spatula. I use the whole bag but some with less of a love for chocolate use 1-cup!
Use a muffin tin with liners and fill- many times this batch will make a few more than 12! More like a baker's dozen! Cook at 350* for 20 to 30 min. I say this because if you have a convection oven they will cook faster!
