So I have never made scones before and really did not have an interest in doing so! I always thought I was a muffin girl! Well, I was visiting with a friend about what she preferred, muffins or scones? Hands down she said scones. So now I was curious, have I been missing out on these delectable treats? Well, I made these and have to say I was pretty pleased with how they turned out so I will share the recipe with you! Enjoy
2 cups NeeNee mix
1/4 cup potato starch
2 tsp baking powder
1/2 tsp salt
1/3 cup cold butter
Mix these ingredients together until butter is integrated into the flour mix.
1/2 cup sugar
1 egg
1/2 cup buttermilk or 1/2 cup milk and 1 tbls apple cider vinegar-let set for 2 minutes.
1 tsp lemon extract
1 tsp vanilla
1/4 tsp xanthan gum
grate rind from 1 med organic lemon with juice
Mix all ingredients well by hand or mixer. If using a mixer do not mix too long just until combined.
Fold in with spatula 1 cup of blueberries.
For a topping use 1/2 cup powdered sugar and 2 tbls lemon juice. Mix well and drizzle over the top.
To shape scones place white rice flour on the counter form the dough into a rectangle. Cut down the center and cut "triangle" shapes. Place on a buttered cookie sheet. How many you get depends on thickness.
Preheat the oven to *400. cook for 5 minutes reduce the oven to 375 and bake for 25 min.
