This was a very easy supper to throw together! You could use any fish that you have freshly caught or in your freezer! For more appealing color on the plate use heirloom colored potato's and serve with carrots! The rice however was very good! We had just got back from a trip and had not run to the store so I used what was in my pantry! Very good flavor.
1 stick butter
2 teaspoons garlic dill seasoning
7 fresh garlic cloves
2 bay leaves
1 tsp white pepper
zest from 1 lemon
juice from 1 lemon
1/4 cup lemon or key lime juice.
In a crock pot place on low and add butter. As it is melting, grate the peel of one lemon into the butter and add the juice from the lemon, add the additional lemon or key lime juice! Next add fresh grated garlic cloves, bay leaves, white pepper, and garlic dill seasoning. Cook for 4 hours (no fish added yet).
Next add 2-4 fish fillets, turn them so both sides are covered in the butter mixture, and cook until soft and flaky.
The rice I served with this meal:
2 cups basmati rice
2 cups water with 2 veggie bouillon cubes or 2 cups veggie broth
1 tbls lemon pepper seasoning
add to an insta-pot and choose the rice setting following their directions. The flavors will be cooked into the rice for an amazing taste! Garnish with cilantro or parsley.
