This recipe has the wonderful taste of garam marsala, a very middle eastern or Pakistan flavor. Much like curry, it has a unique flavor that sends you to another place. Its a very simple recipe and can be completed in 30 minutes. I like to marinate the chicken for 6-8 hours in olive oil and seasonings. You can do this overnight and prepare the next day or start the marinade in the morning to have for supper.
The recipe is as follows:
start with 2 chicken breasts, washed and placed in a dish to marinate. Add 1/2 cup olive oil, 1 tsp curry, 1 tsp garlic, 1 tsp ginger, and 2 tsp garam marsala. Let sit covered for 6-8 hours, you can occasionally flip the breasts if you want.
Set stove at 350 degrees
Start a pan of 2 cups of boiling water
Put the chicken on a cookie sheet and bake for 30 minutes
When water is boiling, add 1 cup of rice and cover for 5 minutes
after 5 minutes, turn heat to low under rice and simmer for 15 minutes, stirring occasionally
When the chicken is done, place 1 breast on a bed of rice
Add other veggies to eat along with dish (broccoli, cauliflower, peas...)
