We all love comfort food, here is one of the best, Meatballs and mashed potatoes. This one goes back to childhood, playing in the yard and hearing mom yell "dinnertime!!". Seeing those meatballs and mashed potatoes always put an instant smile on the face and this tradition continued with our own kids. One of the few meals that there were no leftovers. Lucky for us this time, we do have some leftovers to enjoy!
Directions:
We used a full bag of red potatoes, washed and scrubbed, about 3 lbs. Put in boiling water and cook until soft. Set aside until meatballs are done.
Meatballs:
Place in a bowl
2 lbs hamburger ground
2 eggs
1/2 onion chopped
5 cloves garlic peeled and chopped
1 cup of oatmeal
add salt and pepper 1 tsp each
mix all together and form into small balls, place on a cookie sheet and bake for 30 minutes at
350.
Gravy:
place meatballs in a saucepan on low
sprinkle sweet rice flour over meatballs, about 1/4 cup
cook meatballs on low stirring with flour
turn heat to medium and add 1 cup milk while stirring
continue to stir until gravy begins to thicken, add milk as necessary for more gravy.
add salt and pepper to taste.
Potatoes:
When the meatballs are done, let's finish the mashed potatoes.
turn on stovetop again for potatoes
add 4 tbls butter and 1/2 cup milk to potatoes.
Mash or blend with mixer.
heat until the desired temp for eating.
