First Dunn Brothers approved Gluten-Free Muffin!

Let me tell you about the excitement I had after I received a call from Dunn Brothers! I had spoken to them quite a few months before this call came. On a whim, while we were getting coffee one day, I asked about them carrying gluten-free muffins. They gave me a number and from there a conversation began. First they said no that they had tried gluten-free products and were not interested at this time. I asked if I could bring in a sample of what I bake as I felt they may be surprised. To my surprise they said to bring in three of my favorite muffins, so I did! Then we waited and waited and waited with no word. At that point, I figured well we tried, they said they had not really gone down the GF road because they could not find one that passed their taste test. So onward we went and then out of the blue the call came in. It was the CEO, and his first question to me was, "What did you do to make the muffins taste like this?" They loved them! From here we had to bring in the more for the official taste test an d our Banana Chocolate-Chocolate chip muffins became the first Dunn Brothers gluten-free muffin! This was the turning point for us as now we needed an official kitchen to cook out of! A coffee shop in Dassel ended up being quite the manufacturing place! What a blessing that is was closer to home as without a doubt I would forget something! Caryn, thank you for allowing us to use your space! When we decided to move on from our bistro it was sad to say goodbye to sharing these muffins with you. But now you can make them and enjoy every day if you like!


Pre-heat oven to 350*

in mixing bowl add:

2 large eggs

1/3 cup olive oil

1 cup loosely packed brown sugar

1 cup bananas

2 tsp vanilla

Mix ingredients until well blended, then add the dry ingredients:

1 1/2 cup neenee mix

1/4 cup cocoa

1 tsp baking powder

1/2 tsp baking soda

3/4 tsp sea salt

3/4 tsp xanthum gum

Start with the mixer on low and mix ingredients well. Scrap the sides to be sure all flour is mixed in. Then fold in with a spatula 1-cup to the full bag of Chocolate chips!

Bake for 20 to 30 minutes. If you have a convection oven start checking at 20 min.
