Welcome to my first new recipe for 2022! My goal is to use as much local product I can find in our area Farmers Markets! So my first adventure was to Sun Harvest market that seems to
specialize in all things citrus! There was BBQ sauce, seasonings, candles, jelly, marmalade, and so many more things.
You could sample the fruit and juice! Yes, I got my daily dose of vitamin C!! Now to create something besides juice with the oranges I bought!
2 pork chops- I prefer a thick 1 1/2 in chop but these are just or average store bought chop!
2 oranges
5 sprigs of fresh rosemary
2 tbls apple cider vinegar
4 tbls local raw honey
2 tbls key lime or lime juice
1 onion diced
1 tsp white pepper
Add 1 tbls of butter into a cast iron pan. Turn the burner on med-high. once the pan is hot place in the two pork chops and brown on each side. Turn the burner down to med and add the diced onions, cook until soft. While the onion is cooking prepare and add the rosemary. Strip leaves form the stem and chop up very small, juice of 2 oranges, apple cider vinegar, honey, key lime juice, and pepper. Stir often. Now place burner on a medium low! Place a cover on to help tenderize the meat as the sauce thickens. Once the orange sauce is cooked down to a thick jelly consistency remove from pan and serve. Salt and pepper to taste.
It pares well topped with a sharp cheddar or parmesan cheese. I served it with roasted cauliflower and salad. It was absolutely a wonderful fresh taste!
