These were easy and delish! the recipe made 12 shells that were soft, did not fall apart, and had a great taste.
3/4 cup white corn flour
1/2 cup Tapioca starch
1/2 cup cassava flour
1 tsp salt
1 heaping tsp of old bay seasoning.
1 1/4 cups warm water
In a mixing bowl, combine corn flour, tapioca, and cassava. Combine, slowly add water and salt until the dough can be formed into a ball.
Take out of bowl and knead for 2 minutes or until smooth. Divide into 12 parts.
cut 2 pieces of saran wrap to use for rolling out. Place dough in between the sheets roll, lift saran from both side, replace and roll again- continue doing this until you have a rough circle with the thickness and dimensions you desire. Cover the rest with a damp cloth to keep moist until needed.
On the stove heat a cast iron skillet over Medium high heat. Pan is ready when water sizzles when sprinkled on.
Place dough in the hot pan and cook for 30 seconds on each side. Place on plate and repeat.
