Key Lime pie, for those of you that love this pie will understand my obsession with getting this just right! The best thing about cooking your own pie is you can make it as tart as you like! Now I looked at many recipes. I made the one from the back of the bottle - changed another recipe - liked that one - but still was looking for something a bit more. I wanted it to be less dense, fluffy, and full of flavor with out the intense sweet taste of condensed milk. I have been kicking some ideas around to do this and today it all came together! Here it is I hope that you enjoy it!
1/2 to 3/4 cup key lime
4 egg yolks
4 egg whites
4 oz cream cheese at room temp, be sure it is all soft for the smoothest consistency.
1/2 cup vanilla whole milk yogurt
1/2 cup heavy cream
3/4 cup sugar
4 tbls butter
1 tsp vanilla
1. In a mixing bowl combine egg yolks, cream cheese, and yogurt. Beat until smooth and fluffy
2. in a sauce pan on med, add sugar and key lime, stir until sugar is dissolved, then slowly add heavy whip cream and the contents in the mixing bowl. watch closely and stir until it starts to thicken just a bit.
3. add butter and vanilla continue to stir until butter is melted. remove from the burner and cool for 30 minutes.
4. while filling is cooling, beat the egg whites until fluffy
5. once the filling is cooled fold in the egg whites and hand mix until well combined pour into crust of your choice.
Pre-heat oven to 350. cook 10 to 15 minutes until center is firm. Take out, let chill and serve with whip cream! This will make enough filling for 2 pies or one pie dish that is deeper.
Ground up sugar cookies also make an amazing crust mixed with a few ginger snaps!!
