Hamburger Buns that stay soft!

Here is a recipe that you will enjoy the first day, second day and the third day! They will stay soft and moist! Then if you still have them a week later toast them and use with the eggs Alfredo! I like to have less bread and more burger but that can be your choice!

12 oz of club soda

3 eggs

3 tbls olive oil

2 tbls sugar

1/8 cup potato starch ( add this if you like a fuller bun otherwise without they will come out softer.)

2 1/4 cups of our pizza crust mix

1/2 cup millet

1/2 cup golden flax seed meal

1 tsp salt

2 tsp yeast

2 tsp xanthan gum

In the mixing bowl combine club soda, eggs, olive oil, and sugar. Combine well and mix till frothy. In a separate mixing bowl combine potato starch, pizza crust mix, millet, golden flax seed meal, salt, and yeast. Mix this slowly into the wet ingredients. When well mixed then add the xanthan gum and mix for 4 minutes on high. Let set for 20 minutes then with an ice cream scoop scoop dough onto a well greased pan with well greased English muffin rings. Smooth out with oil. Add a bit of oil on top, this helps to brown. Place in oven pre-heated to 375 and bake for 25-20 minutes.
