Home cooked chicken noodle soup that smells as good as it tastes! These homemade noodles with seasonings included gives this soup the extra kick!
8 cups of water
2 veggie bouillon cubes
5 carrots
2 bay leaves
2 tbls butter
1 tsp celery salt
1 tsp poultry seasoning
1 lb chicken breast
1 onion
5 garlic cloves
in a medium sized kettle add water, bouillon cubes, carrots and bay leaves. Turn burner on Medium. Let cook while preparing the chicken.
In a skillet add the butter, celery salt, and poultry seasoning. Let set on Medium High until butter is melted, then add the chicken breasts, diced onion, and grated garlic. Cook until chicken is done. Cut the chicken breasts into small pieces.
Add to the water mixture and cook all until carrots are half way soft then add the homemade noodles. Cook for 25 minutes or until noodles are soft. I used dried pasta, if using fresh pasta, noodles will take less time.
Made from scratch noodles:
1 package of pasta mix
3 eggs
2 tbls poultry seasoning
2 Tbls oil
Place all of the above ingredients in a mixer and mix for 2 minutes.
Let dough rest-divide into 4 sections
roll out one section at a time-add rosemary to the top of the dough as you roll to the desired noodle thickness
cut noodles the width of an egg noodle
continue until all sections are complete.
If you have extra noodles hang dry them for 2 to 3 days to ensure they are completely dried all the way through. They can be stored in an air tight container for 2 months.
