These cookies took a couple of times to get them just right! I really think you will enjoy the end result! a hint of lemon, cinnamon, and ginger. with a lemon ginger glaze these would be fabulous or cream cheese frosting with a hint of peppermint sprinkles with crushed candy canes would be the perfect way to say Christmas!
1 cup butter
1 cup sugar
1 egg
2 teaspoons lemon rind
2 tablespoons fresh lemon juice
3 tsp ginger
3 cups NeeNee mix
1 tsp baking powder
1/4 tsp salt
2 1/4 tsp xanthan gum
1. Cream butter; gradually add sugar, beating until light and fluffy, stir in egg, lemon rind, juice, and ginger.
2. Combine flour baking powder, and salt in a medium mixing bowl; and to creamed mixture, mixing well. Divide dough in 1/4th and cover and chill well.
3. sprinkle sugar and cinnamon on the counter take out 1 section of dough and flip on both sides. Place a piece of saran wrap over the top and roll out. using cookie cutter cup and place on a well greased cookie sheet. If dough gets to sticky to roll out then put back into the refrigerator and chill for a bit longer.
4. pre-heat oven to 425 and bake 6-8 minutes.
These taste good without frosting but if you are looking for the sugar cookie to frost these will be great!
