Lemon Pepper Fried Fish

Trying some new meals and this one was to good not to share! We used wild caught flounder as our fish. You could use any fish!

2 servings



Oil

1 egg

2 fish fillets

1/2 cup NeeNee mix

1/4 cup potato flour

1/8 cup corn flour

1 TBLS lemon pepper


1. In a large frying pan pour oil into the pan until it is covered and a bit more. Turn burner on Medium High

2. In a separate pan, I like to use a pie pan, and put one egg and beat well

3. In another pie pan place NeeNee mix, potato flour, cup corn flour, and add 1 tbls lemon pepper or to taste and mix well.

4. Place fish in the egg and coat well on each side

5. Place egg covered fish into the flour mixture and coat each side well. Let sit in the mixture turning a few times until oil is heated.

6. Place fish in hot frying pan and cook for 5 minutes until golden brown.

7. Flip the fish to the other side, cover with grated parmesan cover and cook for 5 minutes or until golden brown. Remove and serve with cilantro, lemon pepper seasoned rice with mixed vegetables.


I have to say when you add the lemon pepper to the water it gives the rice an amazing flavor. Almost like candy! I was eating the rice alone the next day!

P.S. if you have extra flour mixture place in a zip lock bag and store in the freezer until you need it again!
