Recently I have decided to try and eat less meat and move towards a plant-based diet. I have been listening to the food revolution and am convinced this will reduce my inflammation, eliminate my joint pain, lose weight, and have more energy! This is a big change but I do know that turning to veggies works. When Bumpa had his first heart attack we changed our diet to include juicing every morning, nuts, and lots of greens. We did not give up meat but reduced it. He did have a second one even with this change, but what I saw in the picture they showed us was an incredible decrease in plaque in a different artery that the second heart attack did not come from. This to me said it all. Food works, yet because of the changes we made and still having that setback Bumpa kind of lost direction. Not that I can blame him as I was pretty frustrated also, but I kept going back to that picture and how the plaque was almost gone from his first one. So now I am back at this change not just for him this time! So here is my first recipe created for some pretty amazing vegan balls!!
4 cups cooked garbanzo beans mashed
1 1/2 cup quinoa
6 garlic cloves
1 cup canned spicy black beans
3 TBLS nutritional yeast
12 mushrooms placed in a food processer
4 heaping TBLS almond flour
6 TBLS flaxseed meal
4 TBLS Israeli spices ( bought from a farmers market in the Florida Keys)
1 TBLS Garma Marsala
1 TBLS Curry
salt and pepper to taste.
Mash all ingredients together until a paste consistency with a few lumps!! Use a cookie scoop and drop into a hot frying pan. I used olive oil, you don't have to use any oil if you have a nonstick pan. Cook on all sides-they are soft so handle with care. I used a lid to cook the insides faster. Get ready to enjoy a high protein plant-based meal. I used Arthers BBQ sauce from Kanas City! This has a little spice and was just perfect. You could also make a veggie-based gravy, make mashed potatoes, and healthy option comfort food at your fingertips!
