NeeNee's homemade bread




This bread has been through more testing than I can even count! At the time we lived in the country and let's just say our chickens ate really well one flop after another! I remember getting the perfect loaf, it rose and the taste was amazing. I wrote everything down and could never do it again! That is when I discovered what humidity can do to your flour! To a NeeNee tidbit keep your flour in a well-sealed container or in the freezer! I hope you enjoy the hours, tears, and times I was ready to give up loaf of bread! I was just eating a toasted piece right before I sat down to write out the recipe and I am still perfecting it! I have made changes to the original and I must say it really was a great piece of toast, just the right crunch and with so much flavor!

1 cup NeeNee mix

1 cup potato starch

1/2 cup millet

1/4 cup sweet rice

1 tsp salt

1 cup club soda

1/3 cup warm water

1 Tbls potato flour

4 Tbls organic canola or corn oil

2 Tbls honey

2 tsp xanthan gum

1 Tbls Yeast

1 tsp apple cider vinegar

1 egg

1. In mixing bowl combine oil, honey vinegar, egg, and club soda- mix until frothy

2. in a 1 cup measure put 1/3 cup very warm water and mix in the potato flour-not starch- Stir well then add yeast and stir until dissolved. let set 2 minutes to activate the yeast. Then add to liquids.

3. combine NeeNee mix, potato starch, millet, salt, and sweet rice mix together and slowly add to the liquid. The mixer should be set on low, once all ingredients are combined well, add the xanthan gum and turn on high for 2 minutes. Do not skip this part as the mixing activates the xanthan gum. Place in a well-greased bread pan, smooth out with oil on top of the loaf, this will help to brown the dough, let rise until just over the pan place in a preheated 375 oven, and bake for 50 minutes.
