Wow, these are awesome! Strawberries and carrots who knew this mix was just perfect. I'll be your strawberry if you'll be my fresh carrot!! You will not be disappointed if you give these a try in the kitchen. Now I wonder what adding a few strawberries right in the muffin might taste like!
Preheat oven to 350*
2 large eggs
1/3 olive oil
3/4 lightly packed brown sugar
1 5.3 oz vanilla yogurt
2 cups grated carrots
1 3/4 neenee flour mix
1 tsp baking powder
1/2 tsp baking soda
3/4 tsp sea salt
3/4 tsp xanthan gum
3 tsp cinnamon
1 tsp allspice
1 tsp nutmeg
Mix eggs, oil, brown sugar, yogurt, and carrots in mixing bowl and mix until blended well. Then add flour, baking powder, soda, sea salt, xanthan gum, cinnamon, allspice, and nutmeg. Mix on low until well blended. line a muffin pan and scoop mixture into the pan. cook for 25 min.
While baking make the cream cheese frosting set aside.
Let muffins cool then frost.
