Prune Tarts

We grew up having these every Christmas! Not until I was older did I realize it paid homage to a Scandinavian tradition! Mom grew up speaking Finn as her first language but I don't think as a whole we had many Finnish traditions. We did call oatmeal puuro, which as I see now is short for kaurapuuro! Slang even for oatmeal!! Anyways I digress! Below I will share one tradition I do remember!


To create the base use the Bumpaneenee pie crust recipe or order the Pie crust mix: https://www.bumpaneenee.com/post/amazingly-easy-pie-crust


Roll out dough and cut into 4x4 squares make a slit at each corner going 1/2 way-leaving enough room for filling in the center. With filling in the center take a corner of the slit and bring to center-do this to all four to form the star shape.


1 egg white blend and use to paint the crust before baking.


Filling:


2 lbs of pitted prunes

add 6 cups of water and cook until prunes are soft. Drain and mash.

add 1 tsp vanilla and 1/2 cup of sugar. Mix well.

Bake 375 for 8-11 minutes.

let cool and sprinkle with powder sugar and serve.
