Great muffins for breakfast with a cup of coffee or just enjoy as an afternoon snack! I have always felt the taste the best the next day! So remember all good things come to those who wait!
What you will need. One muffin tin that will hold 12, place muffin paper in each hole, preheat oven to 350*.
In mixing bowl place:
2 eggs
1 cup brown sugar
2 tsp vanilla
1/2 cup butter (melted)
1-can or 1 1/2 cups of pumpkin pie mix
blend ingredients together until smooth then add:
2 cups NeeNee mix
1/2 tsp baking soda
3/4 tsp xanthan gum
1 tsp baking powder
3/4 tsp salt
slowly blend together until well mixed.
Fold into batter 1 bag chocolate chips ( if you like lots of chocolate!) otherwise 1/2 bag. Do not mix with blender or chips will break up!
Using an ice cream scoop fill about 3/4 full and place in muffin paper. Place in oven and bake for 30 to 35 min.
let cool and enjoy!
