River of Fudge

This has been a family favorite and a best seller!

2 1/2 cups butter

2 cups brown sugar

4 eggs

4 tsp vanilla

4 cups NeeNee mix

2 tsp baking soda

6 cups old fashioned oatmeal

4 cups chocolate chips

4 tsp xanthan gum

2- 14 oz can of sweetened condensed milk


Preheat oven to 350 bake for 25 minutes


  1. In a mixing bowl combine butter, brown sugar, eggs and vanilla. Mix until well blended

  2. In a separate bowl combine baking soda, NeeNee mix, xanthan gum, and oatmeal- mix together with a whisk.

  3. Slowly add flour mixture to the egg mixture- mix until combined well-

  4. On a well greased cookie sheet take about 3/4 of the mixture and spread evenly on the pan- set aside

  5. In a sauce pan combine chocolate chips and condensed milk-Turn burner to low and stir until melted.

  6. Pour chocolate mixture evenly over the oatmeal in the cookie sheet

  7. With the extra oatmeal mixture spread it evenly spaced over the top as if making islands in the chocolate! Hence, River of Fudge!

  8. let cool 15 minutes and enjoy- I find that these bars taste even better the next day or just out of the fridge or freezer!
