Say hello to good health and white teeth! Enjoy Blueberry crumble muffins!

I have always loved blueberries right off the bush, from the store, or out of a freezer. Well, I take that back. When I was a kid and we went to visit my cousins in Washington I would go blueberry picking with them to earn money! I remember one time and I am pretty sure every blueberry I picked had a spider attached to it. Yuck, I do not like spiders so the other pickers all got to hear me scream or gasp each time! Excitement that I really did not need! Was the money really worth it? The trouble with spiders is they can hide and you don't see them until they are crawling up your arm! Ok, I digress. Back to the good things about blueberries! A few tidbits, they are very high in antioxidants, they whiten your teeth, and they have a low glycemic count! One powerful little berry! You can enjoy them in so many ways and we will share our blueberry muffin recipe! Bake and enjoy!


2 eggs

1 cup vanilla yogurt

1/3 cup oil

1 tsp vanilla

1 cup loosely packed brown sugar

Put all ingredients in the mixing bowl and blend well

ADD:

2 cups NeeNee mix

3/4 tsp xanthan gum

3/4 tsp salt

1 tsp baking powder

1 cup fresh blueberries-

if you are using frozen berries use only a 1/2 cup of yogurt.

and you can add your choice of spice such as cardamom, cinnamon, lemon, orange, rosemary, etc I would add 2 to 3 tsp cardamom or cinnamon and liquids 1 tsp of lemon or 2 Tbls of orange or lemon rind. This really is to your taste.

Mix well and then with a spatula fold in the blueberries until well mixed. Do not use the mixer or you will have blue colored muffins!

Bake at 350* for 30 minutes. Makes 12-
