One of my facebook friends was missing some "regular" food since they went gluten-free. I asked her what are some of the the things she is missing. One was FRIED CHICKEN! I took
on this challenge to see if I could get I nice crispy crunch with gluten free flours. Well the first time around they turned out ok, I narrowed it down to what flours to use but it did not quite have the flavor I was hoping for. So I tried it again using what I felt was the best outcome of each trial and I do believe I got it! Here is the recipe below,
First:
In a cast iron pot fill with canola or coconut oil 1/2 full and heat up to 400.
In a seperate bowl combine 3/4 cup butter milk and 1 egg beat well, place 4-5 chicken wings in mixture to soak.
In a second bowl combine :
1/4 cup corn flour
1/4 cup potato starch
1 Tbls sweet rice
1/4 cup white rice flour
1 Tbls black pepper for more of a pepper taste add 1/4 tsp white pepper also
1 Tbls garlic powder- you could add more if you like a garlicey taste!
1 tsp cayenne pepper
1 tsp old bay seasoning
1 Tbls oregano
1 tsp salt.
mix this well
Place the wings that are soaking into the flour mix and roll-cover well and then place in hot oil for 8-minutes. Continue to fry 4 to 5 at a time. and repeat the process
