Spice is nice!

I am enjoying the process of building a treasure chest of great tasting recipes for you the recreation of the other recipes has begun again! These will also be on my Thursday coffee chats! You can join me live or catch them later! Since it is fall and all things pumpkin and apple I found a recipe I have been holding on to for about 13 years! A time when many of my recipes were created from doing farmers markets and the bistro! Well I pulled it out and set to work to see what could come of this one! Well the first attempt I must say was amazing. I made a few tweets to the recipe- I'm never good at following them to a T!! Without further adieu here it is!

*Just a reminder if you are not using the NeeNee mix do not add the xanthan gum!



1 1/4 cup oil

2 cups sugar

3 eggs

3 cups NeeNee mix

1 1/4 tsp xanthan gum

2 tsp cinnamon

1/2 tsp ground cloves

1/2 tsp ginger

1/2 tsp salt

1 large apple diced

1 pear diced

3 Tbls vanilla extract



Glaze:

1/4 cup butter melted

2 Tbls brown sugar

3 Tbls apple cidar

2 Tbls heavy cream

4 oz cream cheese

2 Tbls maple syrup


Preheat oven 350 cook for 50 minutes until tooth pick comes out clean


1. Combine oil and sugar in a large mixing bowl. Beat with wire whisk until thick. Add eggs one at a time, beating after each.

2. Mix flour with cinnamon, cloves, ginger, and salt. Add flour mixture to egg mixture. mix well.

3.Add xanthan Gum and vanilla, mix well.

4. Fold in apples and pears until evenly distributed

5. Grease a 8x11 pan-if it is a bit small that will be ok! and dust with cinnamon- Do not skip this step!


While the cake is baking melt butter in a saucepan and stir in the sugar and syrup. combine well. Add the apple cider and cream. Cook until warm- In a mixing bowl add the cream cheese and glaze- mix until well combined. When cake has cooled for 10 minutes pour glaze over the top- let set 5 minutes cut and enjoy with a scoop of vanilla or maple ice cream!
