Spring has sprung with the sweet and sour taste of Rhubarb Muffins!

2 eggs

1/2 cup vanilla yogurt

1/3 cup oil

1 cup loosely packed brown sugar

Put all ingredients in the mixing bowl and blend well

1 cup of rhubarb-

slice into small chunks and cook until soft. Drain all water (save for Rhubarb lemon aid!) Do not add yet! 

ADD:

2 cups NeeNee mix

3/4 tsp xanthan gum

3/4 tsp salt

1 tsp baking powder

1 tsp fresh lemon,

2 Tbls lemon rind. 

Mix well and then with a spatula fold in 1 cup rhubarb until well mixed. Do not use the mixer it will mush the rhubarb!

Bake at 350* for 30 minutes. Makes 12-
